Turkey Tacos


  • 2 cups cooked rice
  • 1 pound ground turkey
  • 1 onion, chopped
  • 1-2 table spoons of taco seasoning or Mexican seasoning
  • 1 tablespoon low-sodium soy sauce
  • 1/4 cup tomatoes or cumbers, chopped
  • 1 fresh jalapeno, chopped
  • small handful of cilantro, chopped
  • corn tortillas
  • plain yogurt (optional)
  • grated cheese (optional)
  1. If using leftover cooked rice add a splash of water to the cooked rice and warm it in a sauce pan over medium heat. Set aside.
  2. In a saute pan, heat enough oil to coat bottom of pan. Add turkey and onion and brown thoroughly, stirring often.
  3. Add seasoning mix, soy sauce, tomato, and jalapeno. Remove from heat. Add cilantro and salt and pepper to taste.
  4. Warm the tortillas in a hot, dry pan one at a time.
  5. Build your taco.
    • Lay out your tortilla
    • add your rice
    • layer your meat
    • Optional, top with Cheese and a dab of plain yogurt.
